Watermelon, Feta & Mint Pops

Cooling watermelon, refreshing mint & creamy feta 🙌

These skewers are the simplest, most delicious and perfect summer canapé or snack. The flavors are wonderfully balanced and the textures add so much. The crisp watermelon, balances the creamy feta and is finished with a fresh mint leaf. Not to mention they are so pretty to look at! We actually had them requested for a few birthday parties and for an  especially cute 16th birthday they were the star of the evening. They seem to appeal to people of all ages!

There is something so great about Watermelon, aside from its awesome health and hydration benefits (they are 92% water!!)…just the thought can transport you into the heart of Summer. In the UK watermelon is nowhere near as common as a daily snack as it is here in the US. I now eat watermelon daily in the warmer months (by the quart 😂). 

I feel the same way about mint in the summer – we pretty much add it to anything and everything! Water, cocktails, corn salad etc. Everything tastes great with Mint’s natural refreshing kick. We have to mention the balsamic glaze…This glaze really brings everything together in this one bite of heavenly goodness. The glaze acts as a sweetener for the feta and really allows the flavors to meld together in a perfectly balanced bite!

Ingredients
  1. One watermelon, cut into small square dice - about half an inch each.
  2. One block of feta - cut into small dice - equal size to the watermelon
  3. One bunch of Mint - leaves picked
Instructions
  1. Place watermelon, mint leaf & feta on a skewer.
  2. repeat with the rest
  3. Drizzle with balsamic glaze just before serving
  4. Voila & Serve!
