Ten Minute Tomato Soup

For a girl who refuses to get sick 99% of the time, today i had to admit to feeling a little under the weather. Nothing that some of this amazing 10 minute tomato soup can’t fix though, i’m sure. Cook up some delicious and comforting grilled cheese on the side and you’ve got something better than any medication! Plus the fact this soup literally only takes 10 minutes to make, it also makes it the perfect recipe to make for your family on a day that you may have otherwise resorted to a pre-made meal! You know it is healthy and has essential antioxidants in it to make everyone feel much, much better!

Ingredients
  1. 8 cocktail tomatoes (or 4 regular sized!) - cut into quarters
  2. 3 basil leaves chopped (or 1 tbsp dried basil)
  3. 1 clove garlic crushed
  4. olive oil
  5. 1 tsp. salt
  6. 1 tsp. pepper
  7. 1 can diced tomatoes
  8. optional - 0.5 cup parmesan cheese grated
Instructions
  1. Sauté your fresh tomatoes with the garlic, 1 tbsp. olive oil, basil & salt and pepper until slightly flame grilled looking and bright!
  2. Place these ingredients into your blender (we LOVE our Ninja blender) and add in the can of diced tomatoes and blend on low for 30 seconds.
  3. Pour back into your pan and let it boil and then simmer for a few minutes until piping hot!
  4. Serve with grilled cheese or warm bread and butter!
  5. (If you want to add the optional parmesan cheese add it just before serving!)
