Summer Peach Tart

So, for those who don’t know, I have a slight obsession with Georgia, especially Georgia Peaches. Peach season has just begun & the fruit carts in New York are bursting with them, along with all the other delicious summer fruits and I can’t wait to experiment with all of them!! But first things first, this Peach Tart! – Perfect dessert for a party or for family dinner this weekend! It sure cures those sugar cravings!

Ingredients
  1. Ingredients (For the Crust)
  2. 1/2 cups butter (softened)
  3. 1/3 cup of sugar
  4. 1 & 1/4 cups all purpose flour
  5. Ingredients (For the filling)
  6. 3 large peaches sliced
  7. 1/2 cup sugar
  8. 1/4 cup of heavy cream
  9. 2 tsp flour
  10. 1 Egg
  11. handful of sliced almonds
Instructions
  1. Pre-heat the oven to 400 F
  2. Put the butter & sugar in your stand mixer and whisk until creamy
  3. Add the flour and beat on a low speed until well mixed - add a tsp milk if your mixture is too dry.
  4. Press dough onto the tart pan and make sure you get up the sides too. Prick with a  fork numerous times & place in the oven for 15 mins. Reduce temperature to 350 F now.
  5. Remove the crust from the oven and arrange your peach slices in a spiral pattern.
  6. Combine all filling ingredients except the almonds in a bowl and whisk until smooth and creamy.
  7. Pour the mixture over the peaches and sprinkle with sliced almonds
  8. Bake for 35-40 minutes, remove and cool completely before serving.
Notes
  1. Wrap the edge of your crust with foil before putting it back in the oven - this way you won't get burnt edges!
