Southside

Southside

Wow, where to start when it comes to Southside’s…

A Southside is almost a right of passage on Long Island I feel. Everyone knows what they are and how to make them. The funny thing is, everyone makes them differently. Each country club on Long Island has their version and a lot of places claim that they are the first/original/best. However, it really is still a mystery – I think wikipedia narrows it down to about 3 clubs that could have been the first. One being in Chicago, dating back to Al Capone and his Gang. The other states it was born on long Island at a Sportsmen’s club. I guess we’ll never know the real truth!

However, we do know that many places are very proud of their south sides and our recipe comes straight from the club where we met 🙌. Our club had a bartender called Paolo and he created the ‘Southside mix’ – sweet and sour lemon mix – in 5 gallon buckets which would then be divided into bottles for each bar. For the longest time no-one else knew how to recreate his mix. Thankfully they do now!

Southside’s have so many memories for us. My favorite memories are from the 4th July. Myself and Paolo were behind the busiest bar at the Fireworks show and my goodness, if you’ve ever worked at a busy bar you’ll know the feeling when I say, I could not even look up during these 5-6 hour shifts. It was solid Southside making for multiple hours with the occasional dewers on the rocks thrown in! These events would have about 1800 guests and pretty much every single person of age would want a southside.

It is funny, we always talk about how we lived in a bubble for those years on long island. It really is true, a Summer bubble full of new people, new experiences and you rarely came out of the bubble for any reason during the months from April – September. We loved our bubble and we have so many fond memories of our time on Long Island.

The Southside will always hold a special place in our hearts and we will have one each 4th July weekend to reminisce and think back to all of our fun memories. Ironically were headed there today to work! No rest for the Hospitality lovers that we are! 💚

Maybe we’ll see you there, if not, make yourself a Southside, sit back and relax in all of its refreshing glory while you think about all of your own 4th July memories and what it means to you! 😍.
