Pumpkin Spiced Banana Bread

Pumpkin. Spiced. Everything.

I make banana bread at least twice a month (that may be an understatement!) and right now, we have some delicious pumpkin puree sitting in the fridge from our previous recipe (Pumpkin Spiced Spread) and I just had to use it a few more times to finish it off! By adding pumpkin puree in place of one of the bananas plus a little cinnamon & nutmeg goodness, this bread transforms from a classic Banana Bread into a delicious fall treat! Serve warm with a little salted butter and you will be in October Heaven! (Maybe November too!)

Ingredients
  1. 0.5 cup butter (1 stick)
  2. 0.5 cup light brown sugar
  3. 0.5 granulated sugar
  4. 2 Eggs Beaten
  5. 3 crushed bananas
  6. 115g pumpkin puree
  7. 1 tsp. cinnamon
  8. 1 tsp. nutmeg
  9. 2 cups self rising flour
  10. 0.5 tsp. salt
  11. 0.5 tsp. vanilla
Instructions
  1. Preheat your oven to 350 F
  2. Cream together butter & sugar until light and fluffy
  3. Add eggs & crushed banana, pumpkin and spices.
  4. Combine well
  5. Sieve your flour and salt into your mixture
  6. Fold in until completely combined
  7. Add vanilla and stir.
  8. Pour into a greased loaf tin
  9. Bake at 350 F for 1 hour
