Pesto Pasta

We used to have pasta nights at home, and there would always be three options, pesto, tomato & white. They were all amazing and I definitely looked forward to these dinners. So here is a delicious recipe for fresh pesto pasta with extra pine nuts for added benefits! Plus, you don’t have to use this sauce with pasta, it can be the base to an amazing pizza or grilled chicken sandwich! Yumm. You won’t want to buy pesto again, I promise!

Ingredients
  1. Pasta (1 lb package is fine!)
  2. Fresh basil (Enough to fill 3 cups chopped up)
  3. 3/4 cup Olive Oil
  4. 1/2 cup pine nuts
  5. 2 cloves of garlic (minced)
  6. tsp paprika
  7. 1/2 cup Parmesan
Instructions
  1. Boil water & begin cooking your pasta the way the package instructions tell you.
  2. Whilst the pasta is boiling, put the chopped basil leaves & a few tbsp of the olive oil into the blender until they create a semi-smooth paste - you will have to scrape the sides about 3 times during this process.
  3. Add in the remaining olive oil, pine nuts, garlic, paprika & cheese slowly whilst still blending together.
  4. Once it creates the texture you desire (some like it chunkier & some people like a smoother sauce), remove it from the blender ready to mix into your pasta.
  5. Once your pasta is done, drain and place back into the pan, then pour over your pesto mixture and stir to combine.
  6. Serve into bowls & garnish with extra pine nuts, basil leaves & a sprinkle of parmesan!
