Easy Energy Bites

So, our friend Ailsa is here in NYC for a few weeks. As well as being a lot of fun to have around, she has these genius recipes & ideas up her sleeve that she is kind enough to share with us! This recipe for easy energy bites she showed us the other night and we cannot stop eating them, another friend even took a tupperware full home! They aren’t the traditional super healthy ones with only organic superfood ingredients, but they’re pretty close, and much more suited to our slightly sweeter tastebuds! The whole thing can be made in a blender and you get at least 24 bites out of each batch, which in theory should last you a few days..but don’t say we didn’t warn you if they disappear in a few hours! These feel like such a treat but without all the guilt! Winner!

Ingredients
  1. 300g Dates
  2. 6 tbsp cocoa powder (you can sub for cacao powder if you healthy!)
  3. 250g Chunky Peanut Butter
  4. 1/3 cup honey
  5. 1 tsp. salt
  6. 2 tbsp coconut oil
To Garnish
  1. Coconut Flakes/shredded coconut
Instructions
  1. But your dates in a blender and whiz up until they start to form a ball in your processor.
  2. If you have a powerful blender, just put the rest of the ingredients in now and whiz until smooth.
  3. If not, just get the blended dates out and put all ingredients into a bowl and hand mix.
  4. Form approx. 24 balls and place on a baking sheet lined with parchment paper (If you want to roll in coconut, now is the time to do it!)
  5. Place in your refrigerator to set for at least 2 hours.
  6. ENJOY!
Notes
  1. Quick Tip: When you are ready to eat them - let them sit at room temp for about 5 mins before eating to enjoy the full gooeyness!
