Crispy Spiced Chickpeas (V & GF)

I think everyone tries to snack a little less or a little healthier in January. This recipe can help that, replacing chips or pretzels with these easy spiced roasted chickpeas makes for a smart choice. Chickpeas have many benefits, mainly that they are a great source of protein and fiber. I really like to snack on these as they keep me full between Lunch and Dinner, unlike chips etc, which give you an empty fullness. This is imperative when you work practically in a kitchen all day (Our office is technically in the kitchen…with a very small wall dividing the two…sort of) Temptation is high at work as great food is almost always being prepared and the smells are insane, we have had to grow some much needed will power not to eat all day errryday.

Ingredients
  1. 1 can chickpeas (rinsed and drained)
  2. 2 tbsp. coconut oil (or veg/canola)
  3. 1 tsp. salt
  4. 1 tsp. dried cilantro
  5. 1 tsp. cumin
  6. 0.5 tsp. cayenne
  7. 0.5 tsp. tumeric
Instructions
  1. Pre-heat your oven to 425 F
  2. Rinse and drain your chickpeas and then dry them thoroughly between paper towels
  3. Put them in a bowl with the oil and spices and toss to thoroughly combine
  4. Put them in your hot oven for 20-25 minutes - when they are all nice and crispy you can remove
  5. Let them cool on paper towel to preserve crispiness (or eat them hot right out of the oven!)
