Burrito Bowl Casserole

So this is my favorite dinner possibly EVER 💃

May be a bold statement but my goodness, this burrito bowl casserole as I am affectionately calling it, is honestly one of the tastiest, most fun & easiest dinners you will ever make. 

It has all the good stuff in it:

  • Local Ground Beef
  • Black Beans
  • Red peppers
  • Jalepeno
  • Corn
  • Cilantro
  • Lime
  • Salsa
  • CHEESE
  • And some awesome spices!

It is so quick to prep & cook and has SO much flavor it’s kinda crazy! It would be a perfect meal prep meal and we often have it for dinner and then lunch for the next couple of days. We both think we could eat this dish every day and not get tired of it!! 

We like to serve ours with rice mainly with a dash of sour cream, extra cilantro and a little squeeze of lime! It would be delicious on it’s own, or served with lettuce wraps or tortillas too! We hope you try this recipe and love it as much as we do! It is such a great way to feed a crowd! 💚

Ingredients
  1. 1 lb. Ground Beef (You could sub another ground meat here too!)
  2. 1 onion - diced
  3. 2 cloves garlic - crushed
  4. 1 red bell pepper - diced
  5. 1 Ear of corn - stripped.
  6. 1 can Black Beans
  7. one jar (approx. 14-15 oz.) medium salsa
  8. 1.5 cups of shredded cheese
Spices
  1. 1 tbsp. chilli powder
  2. 2 tsp ground cumin
  3. 0.25 tsp. cayenne
  4. 1 tsp. salt
  5. 1 tsp. pepper
To Serve
  1. Chopped cilantro
  2. Lime
  3. Shredded Lettuce
  4. Sour Cream
  5. Rice (optional)
Instructions
  1. Pre-heat your oven to 350 F
  2. Put a tbsp. oil in a large pan on medium high heat.
  3. Once heated, add the chopped onion, sautéed until translucent and then add the ground beef.
  4. Keep on medium high until the beef starts to caramelize (stick to the pan a little).
  5. Add the red pepper, crushed garlic and cook for a further couple of minutes.
  6. Add the corn kernels & the black beans now.
  7. Add all of the spices and mix until everything is coated, take the pan off the heat.
  8. Add the salsa & half of the cheese and mix to combine.
  9. Transfer the mixture to a 9 x 13 baking or casserole dish and top with the remaining cheese.
  10. Put in the preheated oven for 15 minutes or until the cheese is bubbling and starting to brown.
  11. Remove from the oven and top with chopped cilantro & serve.
  12. To serve, top with sour cream, lime juice & extra cilantro.
