Balsamic Beet & Goat Cheese Salad

Have I mentioned that I LOVE beets? oh wait, I think I have….a few times! Well theres nothing better or simpler than beets & goats cheese, they go together like eggs & bacon or cheese & wine. Deeeelicious! This salad is another great side dish that can go perfectly with chicken, steak or anything else you feel like cooking up this summer, it also works as a super fancy looking appetizer at a dinner party and its so simple! Promise!

Ingredients
  1. 4 medium sized beets
  2. 1 4oz. packet of goats cheese
  3. mixed greens (Enough to line the bottom of the vessel you will use to serve the salad.)
  4. 0.5 cup balsamic vinegar
  5. salt & pepper
  6. Olive Oil
  7. balsamic glaze (for finishing)
Instructions
  1. Preheat your oven to 375 F
  2. wash and pat your beets dry and wrap them in foil with a tbsp of olive oil in each.
  3. Roast your beets in the oven for approximately an hour. (they may be down after 45 mins so check with a fork)
  4. once your beets are roasted the skin should rub off easily with a piece of kitchen towel - if not they may not be fully cooked or just grab a peeler and peel them.
  5. Dice your beets up into small half inch cubes and throw onto a baking sheet.
  6. Roast for a further 10 mins with 2 tbs of olive oil and sprinkled with salt.
  7. Once you remove the baking sheet, pour over the balsamic vinegar and mix to combine - all the vinegar should get absorbed by the beets and give them a beautiful balsamic infused taste.
  8. Now line your serving dish or plate with mixed greens, spoon your beets on the top, crumble your goats cheese over the top of the beets, sprinkle with a tsp of salt & pepper and finish with a zig zag of balsamic glaze and voila!
